It can be disheartening to looking into a shopping basket and see so many items wrapped in plastic - but how can we avoid it? In this series we're trying out some recipes where all ingredients can be sourced plastic free, locally!
The first recipe of the series is ratatouille - a French vegetable stew originating in Nice.
Ingredients
2 courgettes
Splash of olive oil
600g tinned tomatoes
red onion
fresh basil
splash of balsamic vinegar
400g tinned green lentils (optional)
1 aubergine (optional)
brown rice (optional)
Directions
Peel and chop the onion
Wash and chop the courgettes into 2cm chunks
Fry the onions in a pan with some olive oil
Once softened, add the courgette and a pinch of salt and pepper
Once browned, add the tinned tomatoes and a splash of balsamic vinegar
Simmer for 25 minutes until courgettes are softened
Add the tinned lentils (optional). I find it adds a bit of protein and extra texture.
Simmer for a further 5 minutes and serve hot with a chunk of crusty bread or brown rice
